These potatoes make a great side dish for most any meal and are a neat alternative to your same old potatoes. I can imagine these being especially fun to make with kids, letting them smash their food!
I love these potatoes because they get crispy on the outside and stay soft on the inside. You can leave these pretty plain with just some oil, salt, and pepper or can add the garlic and parmesan to jazz them up a bit. Or, create your own flavor combo!
Parmesan Garlic Crispy Smashed Potatoes
6 yellow potatoes
Extra virgin olive oil
Fine sea salt & freshly ground pepper
Shredded parmesan cheese
Yield: 6 potatoes (2-3 servings)
Preheat your oven to 450 degrees F. Bring a medium pot of slightly salter water to boiling and add the potatoes. Cook the potatoes for about 20 minutes or until tender. Drain the potatoes and let them cool and dry. Place the potatoes on a lined baking sheet and smash each one (I used the bottom of a small frying pan) to make them flat.
Drizzle or spray the top of each potato with olive oil and sprinkle on some salt, pepper, and garlic powder. Put them in the oven and roast for 15 minutes. Remove the pan and carefully flip each potato over. Drizzle or spray this side with olive oil and sprinkle a little salt, pepper, garlic powder, and parmesan on top. Bake for another 10 minutes and serve while the potatoes are hot. Enjoy!
