For a refreshing grown up treat this summer, make some simple alcoholic popsicles! The fresh watermelon and lemon are the perfect combination of sweet and tart and the tequila gives it a nice punch. We had extra watermelon and couldn’t eat it fast enough so these were the perfect solution. Just make sure to hide them in the back of the freezer, because if spotted by a toddler, they’ll want one for sure. Just trust me on that one. 😉
If you want the refreshing fruit flavor without the booze, simply substitute 1/4 cup water or lemon lime soda for the tequila and triple sec. You could also make these with lime zest/juice instead of lemon. Enjoy and hope you’re staying cool this summer!
Watermelon Lemonade Boozy Popsicles
3 cups cubed watermelon
1/4 cup sugar
1 tsp lemon zest
1/4 cup fresh lemon juice
1/4 cup tequila
2 Tbsp triple sec
Yield: 6-8 popsicles
In a blender, blend together the watermelon, sugar, lemon zest, lemon juice, tequila, and triple sec until smooth, 1-2 minutes. Pour through a fine mesh strainer into a large bowl, discarding any solids and seeds left behind.
Pour watermelon mixture into popsicle mold or paper cups then insert wooden sticks. Freeze until firm, preferably overnight.

Here’s a simple and delicious recipe to try while there’s still some tasty watermelon around! This wasn’t a recipe that I’d normally try myself, but after a friend made it and gave me a taste, I was hooked. Even though the combination of ingredients might sound odd, I promise that the flavors work incredibly well together. The juicy sweet watermelon balances nicely the slightly salty feta, plus the onion and fresh mint, mixed with a simple tangy dressing make for a refreshing summertime salad that’s highly addictive! Plus, the vibrant colors make this an impressive side dish for your final picnics or parties this summer. Enjoy!
Summertime Watermelon Salad
Fresh cubed watermelon, about 2 lbs
1/2 sweet onion, chopped
2 Tbsp red wine vinegar
Salt and pepper
1/4 cup extra-virgin olive oil
2 Tbsp chopped fresh mint
2 oz crumbled feta cheese
Yield: 4 servings
In a large bowl, combine the cubed watermelon, chopped onion, and feta. In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, then add in the chopped mint, taste, and adjust seasonings as needed. Pour the dressing over the watermelon mixture and toss gently until everything is coated and evenly mixed. Let it sit in the refrigerator if possible for the flavors to really blend. When ready to serve, toss it again, garnish with mint sprigs (optional), and serve chilled.
